La capacità di alcuni vini rossi di invecchiare, alle giuste condizioni, è straordinaria, con parabole dove i vertici sono allungatissimi. Chiaro, bisogna tenere conto della singola propensione a migliorare nel tempo, oltre a variabili costitutive, di terroir e annate favorevoli. Sta di fatto che, a parte vitigni ormai consacrati alla facoltà rara di sfidare le insidie degli anni, ci si trova a volte con sorprese che lasciano gioire il palato.
Le caratteristiche di un vino invecchiato difficilmente riportano a quelle originali. La trasfigurazione è il più delle volte completa, cambiando totalmente i connotati del vino, lasciando all'esperienza del singolo e alla sua sensibilità la possibilità di apprezzarne appieno le nuove caratteristiche. Entriamo nel mondo dei vini rossi, di varia tipologia.
